So, after finishing yesterday’s blog post, I wasn’t too hungry for a full-on dinner, so I opted for a semi-healthy dessert instead and split it with Rene. This is a quick and easy snack or dessert, that’s quite filling.
Quick Apple Crumble
(serves 2)
2-3 apples (depending on size and hunger level)
cinnamon
1/2 c dry oats
1/4 c brown sugar
1/8 cup water
1 tsp vanilla extract (optional)
Slice the apple and sprinkle with cinnamon.
Mix the oats, brown sugar, and vanilla extract with the water
In bowl, pour the oat mixture on top of the apples
Microwave for 60 seconds, (or more to desired level of doneness).
Apples will be hot! Let cool and enjoy!
