Homemade Biscuits

Homemade biscuits (no shortening!)

2 cups flour
1 tbs baking powder
1 tsp. sugar
½ tsp salt
1 stick buter (8 Tbs)- cold
¾ buttermilk, cream, or half-n-half

-preheat oven to 450
-mix all dry ingredients
-cut stick of butter into pieces, with hands work into flour mixture (until pea size crumbs)
-add liquid, mixing until a bit loose and sticky
-pour dough onto floured surface, knead- 1 min. (should be smooth and no longer wet)
-take dough into ball, hit a couple minutes
-roll dough out (about ¼” thick)
-use cutter or glass to cut biscuits
-place on greased baking sheet
-bake 15 minutes or until tops are golden brown

I used the top of my spray oil, which cuts a precise circle and makes mini biscuits (about 20-1 ½ inch biscuits- each 97 calories)
